Or you'll end up with more things in your cart than you have room for in your car/house/geographical-region-of-the-country. Thanks to this Rachel Ray recipe, I was able to use the pound of crab meat that I purchased during my overzealous Costco trip before I was forced to throw it away and get tag-team scolded by Jorts and my mother.
Disclaimer:
Ignore Rachel "Monster Portions" Ray's suggestion that this recipe serves 2, unless you can eat half a pound of crab meat smothered in a rich sauce in one sitting. (And if you can, you go with yo bad self.) I think the cakes would've come out crispier/lighter had I made 6 or 8 smaller patties.
Also, 7 slices of bread is overkill for this amount of crab meat. I think 3 or 4 slices would've been more than enough. Or just use store-bought bread crumbs to save yourself the clean up.
For the salad:
- Heat a large skillet over med heat with a tbl of extra virgin olive oil in it.
- Add a cup of grape tomatoes or halved cherry tomatoes along with 1 clove of garlic, chopped.
- When the tomatoes burst, add a pound of spinach, turning often.
- Once the leaves are wilted, well coated with the EVOO and mixed with the tomatos & garlic, turn the heat off.
- Serve immediately.
i think im going to make that salad tonight because it looks delicious. and i have all the ingredients. ill let you know if it turns out
