What you'll need:
- 1 medium onion, sliced thinly
- canola oil
- 2 lbs of boneless, skinless chicken breasts, cut into chunks
- grill seasoning
- soy sauce (I prefer the low sodium kind)
- 4 garlic cloves, chopped
- 1 bell pepper, seeded and sliced thinly
- 1 small can sliced water chestnuts
- frozen green peas
- chipotle in adobo
- ground cumin
- honey
- maple syrup
- parsley or cilantro
- Heat large skillet over high heat. Add 2 tbl of canola oil then the chicken. Season chicken with 2 tbl of grill seasoning.
- Once chicken is browned on all sides, add 2-3 tbl of soy sauce then push it to the sides of the pan, exposing the center of the skillet.
- Add onion slices, garlic and bell pepper. Cook until softened, 2-3 mins, then add water chestnuts and 1 cup green peas. Mix chicken and veggies together.
- Add 2 chipotle peppers and 1 tbl of adobo (sauce) along with 1 tbl of cumin. Toss to coat evenly.
- Add 2-3 tbl of honey and 1/4 cup of maple syrup. Turn off heat and mix well.
- Garnish with a handful of chopped cilantro or parsley and serve with brown rice or quinoa.
