Giddy Like a Schoolgirl

I was while watching tonight's Dancing With The Stars. (and apparently channelling Yoda while composing this post)

The 12 year old still living inside of me decided to come barrelling out jumping, squealing and frantically clapping at the sight of not one, not two, but all THREE of my childhood obsessions. Boybands and certain book series like the Babysitters Club (I wanted to have Claudia's fashion sense, Stacey's handwriting and Mary Anne's boyfriend) still bring out my inner child but my 27 year old self finds joy in the little things:

  • Crawling into bed with clean sheets that still smell like fabric softener
  • Crawling into bed fresh after an evening shower
  • Crawling into bed with clean sheets that still smell like fabric softener fresh after an evening shower (especially after a long day)
  • When my little man reaches up for me and says "Mom" with his chipped toothed smile
  • When Jorts does the dishes without me asking him to
  • Having a full tank of gas (but not the paying for it part)
  • Old married couples
  • Home-made versions of take-out that's healthier & lower in calories but just as yummy, if not yummier (with an extra dash of Sriracha for good measure) like tonight's Chicken Fried Rice


  1. Combine 1 tbl of soy sauce, 1 tsp of cornstarch & ~1 lb of chicken cut into bite-sized pieces in a bowl. Toss to mix & coat well. Combine 4 tsp of soy sauce, 2 tbl of hoisin sauce, 2 tbl of rice wine vinegar, the juice of 1 lime & a tsp or 2 of Sriracha in a separate small bowl.
  2. Heat 1 tbl of canola oil in a wok (or large skillet) over med-hi heat Add chicken mixture and stir fry until mostly cooked thru. Push chicken to one side of the skillet and add 2 large eggs beaten to the open side of pan. Cook for ~1 min, stirring constantly. Stir chicken and scrambled eggs together. Remove chicken & egg mixture from pan.
  3. Return pan to heat and add 1 tbl of canola oil. Add 1 small onion chopped, 1 tsp of peeled & grated ginger and 3 cloves of minced garlic. Saute until fragrant, a couple mins. Add ~1 cup of cooked rice and cook for another min. Add a cup of green peas then cook for another min. Add chicken mixture and soy sauce mixture and cook for another couple mins until everything is heated through. Remove pan from eat and stir in 2 chopped scallions.
  4. Get your grub on!

  1. yum. claudia was awesome, logan was dreamy but i always wanted to be stacy (minus the diabetes) OR..the leader. damnit now i can't remember her name. the bossy one.
