Buffalo Chicken Pizza

In response to the overwhelming response (Jessica), here is the recipe for the yummy dinner from this post.

Ingredients:
  • 3/4 lb chicken breast
  • 1 tbl extra virgin olive oil
  • Grill seasoning (I like McCormick Montreal myself. You can find it in just about any spice aisle.)
  • 1 Boboli pizza crust (you can always get pizza dough from the grocery store or your local pizza joint but Boboli comes already cooked and you don't have to roll it out. I'm all about easy peasy)
  • 2 tbl butter
  • 2 tbl Worcestershire sauce
  • 2-3 tbl of hot sauce (I like to use half Frank's and half Sriracha)
  • 1/2 cup tomato sauce
  • 1 large onion, sliced
  • 1 cup shredded Jack cheese (Monterey, Colby mix...whatever you have handy)
  • 1/2 cup blue or feta cheese crumbles
  • 3 scallions, thinly sliced
  1. Preheat oven to 425 degrees. Coat grill pan or large skillet with cooking spray and preheat to hi.
  2. Sprinkle grill seasoning over both sides of chicken (~1 tbl of seasoning, eyeball it)
  3. When grill pan is hot, cook chicken ~3 mins per side until just about cooked through. (It'll finish cooking in the oven so you don't want to overcook the chicken.)
  4. While the chicken is cooking, heat olive oil in a saute pan over med to med-hi heat. Add onions and cook until softened, ~3-4 mins. I like to leave it a bit crunchy for texture but feel free to cook it longer to your liking.
  5. In another skillet over med heat, melt the butter and stir in Worcestershire, tomato sauce & hot sauce.
  6. When chicken is done, let it rest for a few minutes then slice it thin. Add chicken to sauce and toss to coat. Cover the pizza dough with the saucy Buffalo chicken, onions, cheeses and scallions. Bake according to Boboli instructions (or ~18-20 mins if you're using raw pizza dough) until crust is crisp & cheese is bubbly.
Add an easy side salad and a few pepperocinis (a must in my house) then enjoy!
